Ice Cream for Fatties

📝 The Veggie-Base Ingredient Masterclass

The science behind turning steamed vegetables and low-calorie liquids into decadent, spoon-bending soft serve.

🥦 Steamed Cauliflower (The Churn MVP)

Why it works: Cauliflower contains pectin and fiber structures that mimic dairy solids when broken down by the high-RPM Ninja blade. When thoroughly steamed until completely limp (not crunchy) and blended smooth, it loses its raw brassica aroma and becomes an ultra-neutral cream builder.

Dosage: 120g - 150g per pint. Always steam or boil first; never use raw frozen florets directly in the blade.

🥒 Steamed Zucchini (Peeled)

Why it works: Zucchini has a 94% water content paired with subtle soluble fiber. Peeling the dark green skin prevents green specks in vanilla or chocolate bases. Once steamed, it purees into a silky, translucent emulsion that creates an Italian gelato-style mouthfeel.

Dosage: 130g - 160g peeled and steamed. Perfect for refreshing fruit and sorbet styles.

🍠 Sweet Potato & Butternut Squash

Why it works: Natural starches and complex sugars provide authentic body without requiring heavy cream or egg yolks. Ideal for warm spice profiles (cinnamon, chai, salted caramel, pumpkin pie).

Dosage: 100g - 120g baked or roasted. Slightly higher in natural carbs (~15-20g) but completely eliminates the need for extra thickeners.

🍯 Sweeteners, Allulose & Xanthan Gum

The Freezing Depression Principle: Sugar lowers the freezing point of water. When using zero-calorie sweeteners like Stevia or Monk Fruit, water freezes harder. Adding 1-2 teaspoons of Allulose or Chicory Root Syrup keeps the ice crystals micro-fine and prevents rock-hard icy pints.

Xanthan Gum: Use no more than 1/4 teaspoon (approx 0.8g). Too much causes a gummy, gummy-bear texture.
